Egg Fried Rice
This is a quick, healthy and easy meal for your children. It is filling, contains vegetables and protein. The vegetables can be exchanged for other vegetables of your choice. Quantities are dependant on how many people are being served (these quantities are for 2 children).
Ingredients
Cup of Rice
1 onion, finely chopped
1 courgette, finely chopped
Peas (can be frozen)
Broccoli
2 Eggs
Olive Oil
Bacon or Sausages (Both optional)
Cooking Instructions
Put the rice onto boil. Finely chop the courgette and onion and lightly fry using olive oil in the frying pan. If you want to use bacon and/or sausages then place these in the grill. When the rice is 5 minutes from finishing drop the peas and broccoli into the pan. Whisk the eggs in a jug and move the cooked cougette and onion onto a plate. Once the rice is boiled pour the whisked egg into the frying pan and add the rice and vegetables. Stir until the egg is cooked. Add the cougette and onion and chopped sausages/strips of bacon. Fry for a couple more minutes then cool slightly before serving.
